This soup is great for winter lunches and suppers for the family. It freezes great.
Ingredients
1 1/2 lbs of ground beef 750gr
1 medium onion ,finely chopped
1 28oz can of tomatoes 796 ml
2 cups water 500ml
4 cups of beef broth
1 10oz can of tomato soup
4 carrots , finely chopped
1 bay leaf
3 sticks celery, finely chopped
parsley
1\2 tsp thyme 2ml
pepper to taste
1\2 cup pot barley 125ml
Instructions
Brown meat and onions. Combine all ingredients in a large pot simmer cover at least for 2 hr or all day. Potatoes could be used instead of barley.
Freeze when cooked into serving sized containers
